I hope everyone else is enjoying some family time this Christmas season.
It's 10:54pm on a Tuesday. Doug is still planting away at the field. My dedicated, hard working, passionate farmer has been known to log some long days. The past few weeks I realize just how often. We miss him when he's not home for supper with us. My eyes grow weary waiting on him to get home safely. The kids ask when Daddy will be home. I say, I'm not sure and Brittany comments, "That means late". The point is this. We realize the importance of his passion and dedication, but the outside world sometimes does not. I know during planting and harvest season that he will not be able to go to family gatherings, watch our kids' sporting events, or jump in the car for a family outing. The kids and I eat supper alone and now that Summer is here we sit up and wait for him to walk in the door! He keeps a high stress level from now until the crop is harvested. It's almost . . . HARVEST TIME! For the Wheat Crop Luke Bryan can sing it far better than I can say it! I am getting a little ahead of myself with the harvest time song though. They just completed peanut planting and have started with cotton. If it is the Lord's will, I'll get to show you pictures when those are ready for harvest too! While we're on the farm subject our middle farmer, Lockwood , will graduate Kindergarten next week. He is very excited that he gets to be "Old McDonald" and ride on the school tractor in their play.
I have been promoting spinach lately - ask anyone! But really, the nutrition value in this stuff is too good to turn down. Here are some yummy ways to add spinach to your diet and just in time for St. Patricks Day! It's hard to tell in this picture, but these wraps have a green hue to them. These are spinach wraps! I found them at Sams. They also have several different types - my favs are these and the whole wheat ones or the herb ones. I use my panini grill but you could easily do these in a skillet. Just sprinkle your favorite cheese (I use mozzarella), add spinach leaves, your favorite meat (I use turkey or shredded chicken), and then sprinkle a little more cheese to the top. The wraps are pretty big so I put all the ingredients on one side and fold over. I use the cheese as a gluing agent, but you could substitute for a dressing or sauce.
